Pork Tenderloin with Fig & Cherry Sauce

INGREDIENTS
- 1 lbs pork tenderloin
- 1 cloves garlic minced
- 1 tbsp extra virgin olive oil
- salt & pepper
- 1/2 cup fresh or dry black mission figs cut small pieces
- 8 oz frozen black cherry
- 1/4 cup port Wine
- 1/2 cup chicken broth made from bouillon
- 1/8 tsp dry thyme
- 1 large Japanese sweet potato
DIRECTIONS
1. Rub the pork with garlic, olive oil, salt & pepper.
2. Heat the grill over medium heat, place the pork and cook all sides until golden brown for about 7 minutes. Take out the pork from the grill and keep it on the plate.
3. Add figs, black cherry, port wine, chicken broth, dry thyme on the grill, then put pork back into the grill.
4. Put sliced Japanese Sweet Potatoes around the pork and put the lid on, steam-grill for 15 minutes untill the pork and the potatoes are cooked inside.
5. Take the pork out and leave on the dish for 10 minutes.
6. Slice the pork and pour the fig & cherry sauce over it. Serve with Japanese sweet potato.
